Back at it

Well, I seem to have be extremely lax about posting.  I need to make a concerted effort to keep this up.
It's February 25,2010 and I've been sick with the Flu since Sunday but seem to be on the mend.  We are expecting our third major snowstorm of the month.
I need to go to the store to pick up some milk, and toilet paper. I'm just kidding about the milk and toilet paper but do need to be some iced tea for Tina and other stuff.
I am planning on making some beef potpie for dinner tonight. This is going to be a "what's in the frig".I found some frozen leftover mexican beef, peas, corn, and edamame along with some carrots and potatoes should be a good start.  Also have some bought pie dough(I know, how could I).
I will post a follow up once we eat it.

  1. OK, they turned out very good. Sauteed onions and celery in olive oil until translucent. Added diced carrots and then diced potatoes and cooked till almost tender. Added leftover mexican beef and some defrosted stock I had. Be careful with the amount of stock, you do not want it runny.
    I left if cool and then put it in pastry-lined 6" pie plates with a top crust that had a hole in the center. Then brushed to top with egg-wash and sprinkled with salt and pepper. Baked at 425 for 15 minutes then finished them off at 350 for about 25 minutes.
