Back at it

Well, I seem to have be extremely lax about posting.  I need to make a concerted effort to keep this up.
It's February 25,2010 and I've been sick with the Flu since Sunday but seem to be on the mend.  We are expecting our third major snowstorm of the month.
I need to go to the store to pick up some milk, and toilet paper. I'm just kidding about the milk and toilet paper but do need to be some iced tea for Tina and other stuff.
I am planning on making some beef potpie for dinner tonight. This is going to be a "what's in the frig".I found some frozen leftover mexican beef, peas, corn, and edamame along with some carrots and potatoes should be a good start.  Also have some bought pie dough(I know, how could I).
I will post a follow up once we eat it.

What's for Dinner

Looks like Pot Roast is on the menu today. No real recipe for this, I just make it with what' available.
Starting with chuck roast, dredged in seasoned flour and then browned in a hot dutch oven.
Then remove the meat from the pan and brown some diced onions add some garlic and return the meat to the pan. Add beef stock to come up at 1/2 way up the beef.  You can also add a can on seasoned diced tomatoes. Add seasoning, I like thyme, bay leaf, parsley and salt and pepper.
Put it in a 325 degree oven for about 3 hours.  Depending on how done it is, you add cubed vegetables about 30 to 40 minutes before the meat is done. Correct seasoning.
I like to use potatoes, quartered onions, celery, carrots, rutabagas, winter squash, parsnips, turnips or any combination of them depending on what is nice in the grocery store.
Serve with rolls or biscuits.
